You may have also seen questions about whether heat destroys collagen protein. What Is Collagen?
Collagen is the structural protein of the body. It is found in the joints, skin, ligaments and tendons. Collagen supplements are powders that dissolve completely in most liquids. They have become popular in the last few years for skin care and joint support.

But research has found that collagen peptides are not denatured when added to coffee. A 2011 study found that collagen protein remained intact until the temperature reached 302 ℉. A cup of coffee is generally heated to around 200 degrees. The acidic nature of coffee also doesn’t seem to significantly change the structure of collagen peptides.
The reason why collagen does not denature when slightly heated in a hot beverage might be that collagen peptides are already broken down and denatured during manufacturing. To make collagen peptides, animal hides must be exposed to an acidic solution and put in water that is 190℉ to start breaking down the protein. This process helps improve digestibility and absorption of the collagen protein.
How to Use Collagen
Although there is some disagreement about putting collagen in your daily cup of coffee, there is no reason to stop this practice if it’s convenient for you.
