These bars are our take on DIY granola bars. Packed with protein, fiber and healthy fats, they can be enjoyed as a filling on-the-go breakfast, snack or sweet treat. For more flavor variety, try subbing other nuts and dried fruit for the almonds and raisins. You can also add chocolate chips or vanilla extract for additional flavor combinations.
(Makes 1 dozen bars)
2 cups rolled oats
½ cup almonds, chopped
¼ cup raisins
¼ cup dry cranberries
2 tbsp chia seeds
2 tbsp ground flax seed
¼ cup natural peanut butter or other nut butter
¾ cup honey
2 scoops Native Origins Collagen Peptides
1 tsp cinnamon
Pinch of sea salt
In a medium-sized mixing bowl, combine all dry ingredients (oats, almonds, raisins, chia, flax seed, cinnamon and sea salt).
In a small saucepan, warm peanut butter over medium heat until it reaches a softened or pourable consistency. You can also microwave the peanut butter to soften it.
Add honey to peanut butter, stirring to combine well.
Remove peanut butter and honey mixture from heat and stir in collagen.
Pour peanut butter mixture over dry ingredients. Stir until mixture is well coated.
Transfer mixture to an 8x8 square baking dish lined with parchment paper. Press evenly into a single layer and place in the fridge to set for 1-2 hours.
Remove from the fridge and use parchment paper to help lift bars from the pan. Slice evenly into 12 bars.
Store bars in an airtight container at room temperature or in the refrigerator.
